Get your pasta going in generously salted water, once done, reserve about a 1/2 - 3/4c of the pasta water (aim for the part with the little pasta bits hanging around the bottom of the pot), set aside. Drain cashews and place in a blender along with 1tsp fresh lemon juice, 1-3 cloves fresh garlic, hot pasta water, 1tb olive oil, and 1tsp herbs/seasonings of choice (I used kirkland organic no-salt seasoning), blend for a minute or two to emulsify. Pour atop your pasta, garnish if you're feeling fancy, and serve it up!

How is it vegan?? What do you use as a sub? (i'm gf too...)
Well not sure about gluten free, but! For the sauce you make a rue with equal parts (3tb each?) vegan margarin (I use earth balance) and flour (replace with cornstarch for gf?) then add some unsweetened plain almond milk(1c or a bit more maybe?), about 1/4c nutritional yeast, a drop of yellow mustard, and a pinch or two of turmeric; stir like a maniac! Then lower heat. Here you add a cup or so al dente pasta in the sauce pot and let them get friendly together! Turn off the heat and add spinach then it's ready when your spinach is! Ta-da! Sorry for wonky measurements, hope this helps! @miskatonika
