When it comes to dining out, Los Angeles is all about image and showmanship and Top Chef-ery and exclusivity, so the fact that Kaz Oyama’s Totoraku reigns as the hardest restaurant to get into in the city is kinda mindblowing – and hilarious. Because Totoraku is flat on image. No website or social media, no reservations (they won’t pick up the phone), half the neon lights are burnt out inside, even the sign outside is wrong. Something about a deli on the awning? // There's no way to get in unless you're personally friends with Kaz. @luiziana1 its steak tartare.. Its completely raw..very classic and safe if high quality beef is used such as filet wagyu etc
And if done right is safe and delicious. How does it taste good? Simple you're getting the pure flavor of the meat how it's meant to taste .. sure there's no maillard reaction but it's not needed for this .. the yolk helps add richness.. Most chefs add cornichons Tabasco.. Dijon mustard.. And other v tastes to the tartare to give it their own v twist

For 10 years, it's been an active journal of my life and brain.
